Several hectares of young and secular olive groves, of the de Ruvo Giuseppe’s Farm worked according to the knowledge of the past, together with innovative cultivation techniques and modern irrigation systems, in harmony with the ecosystem and respect for the environment. A perfect pruning, performed by expert olive growers, a mild climate and the right amount of rain, guarantee a good olive production.

Our olives of the Ogliarola of Bari and Coratina varieties, hand-picked directly from the plant when perfectly ripe and pressed, within a maximum of 24 hours of harvesting, in the de Ruvo Giuseppe’s Oil Mill, allow us to obtain an excellent oil.

For the production of oil, in our oil mill, a latest generation of a CONTINUOUS MIXED CYCLE system is used where together with the technology we still find the traditional granite millstones that allow to obtain a soft and balanced oil or the CONTINUOUS CYCLE system is used,( that is without the millstones ).
The oil is extracted at a temperature not exceeding 27 ° C, hence the term “COLD EXTRACTION”, this allows to maintain the nutritional and physical qualities of the oil, enhancing the benefits and enhancing the flavor.
Remember… Immediately after production, in order to preserve the organoleptic characteristics of the oil, it must be stored in underground tanks or steel tanks to avoid oxidation.

TRADITIONAL extra virgin olive oil
Harmonious and balanced, the traditional “OLIO DE RUVO” (DE RUVO OIL)
is a medium fruity oil
that is obtained from a perfect combination of two typical cultivars of the area: the Ogliarola of Bari and the Coratina.
LEMON oil
This exceptional oil is the result of the simultaneous pressing of fresh and whole olives and lemons, produced and processed by the de Ruvo Giuseppe’s Farm, without adding flavorings. It is an excellent delicate and fragrant seasoning oil, perfect raw, on first courses such as turnips, salads, boiled fish and roast meats, ideal for dessert preparations.
